Going Green….Plant-Based

Hmmm….I am starting a new dietary journey, plant-based one. I have wanted to try a plant-based diet for several years but, the act of actually giving up chicken and cheese would always stop those thoughts in their tracks. But, I have seen how the commercial meat industry treats animals and the studies backing up the many health benefits of a plant-based diet, which has me jumping in with both feet. I have done a lot of research, and I like the Engine 2 plan. I like the supporting research and the fact that Rip did this while being a professional triathlete, not an easy task. I am very excited, scared of failing and scared how my kids are going to react to this new change. I have one that loves fruit but no veggies, and another that likes no fruit and a few veggies. I want to incorporate this into my kids diets so, and even had my registered dietitian review it. I got the all clear last week, made a stop of Sprouts today, ate a few hot dogs and hamburgers today at a barbecue, so I am ready to get started tomorrow. I am going to try to blog daily about how it is going and will note it in the post title as Day …., so you can slip them if you do not care to read those. I have faith if this is in God’s plan for my life then He will provide the courage, funds, and patience in this new journey.

      No :(, just the munchkins, my extended family are hardcore meat-eaters.

        Still – the munchins – wow! I can’t imagine doing that in my family.
